
Crispy Salmon

Salmon is one of my favorite kinds of fish. As long as you're careful not to overcook it, it ends up with a great texture and flavor without getting too dry.
I learned this recipe from this Gordon Ramsey video. The salmon skin ends up really crispy, and is a great accompaniment with the rest of the salmon fillet.
Ingredients
- Salmon fillets
- Salt
- Thyme
- Olive oil
Directions
- Using a sharp knife, carefully cut slits into the salmon skin, about 1 cm deep. It helps to squeeze the top and bottom of the fillet together gently so the salmon skin is firm when you do this.

- Stuff a little bit of salt and a few leaves of thyme into each slice. Cover the salmon with a small amount of olive oil.

- Heat a couple tablespoons of olive oil in a skillet on medium-high heat. When hot, put the fillets skin side down in the oil. Season the fillets with salt in the pan.

- As the fillets cook, you'll see the color of the fillets change at the bottom. Cook undisturbed, skin side down, until the color change is about 70% up the side of the fillet.

- Flip the fillets and cook for a minute or two, until they reach your desired doneness.

- Flip the fillets back over, and turn the heat off.

- Serve skin side up.
