
Garlic Parmesan and Buffalo Chicken Wings

Wings are a great snack (or meal) to know how to make. You can get them pretty crispy in your oven, without needing a deep fryer. Once you know how to make the wings, it's pretty flexible - you can toss them in whatever sauce you want.
I've included recipes for two of my favorite wing sauces - garlic parmesan and buffalo. I often make both sauces at the same time for variety, so the amounts I've provided for each are for half the wing batch. If you're only using one of the sauces, you can just double the amount.
Ingredients
For the wings
- 3 lb wings (separate wingettes and drumettes)
- Salt and pepper
For the garlic parmesan
(for half the wing batch, double for the full batch)
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 1 tbsp garlic, minced or pressed
- 2 tbsp parsley, chopped
- 1/4 tsp salt
- 1/4 cup grated Parmesan cheese
- Definitely try to grate your own parmesan. Don't use the caked stuff in a bottle.
For the Buffalo sauce
(for half the wing batch, double for the full batch)
- 2 tbsp unsalted butter
- 3 tbsp Frank's hot sauce
- 1/4 tsp Worcestershire sauce
- 1/4 tsp cayenne pepper
- You can increase this if you want the sauce to be spicier. Don't increase the Frank's to make it spicier - Frank's has vinegar and will make the sauce too sour.
Directions
Wings
- Preheat oven to 350 degrees Fahrenheit.
- Lay out your wings in a rimmed baking sheet lined with foil, skin side up. Season with salt and pepper.

- Bake for 20-25 minutes, until cooked.
- Remove from oven and drain liquid. Something like a turkey baster works well for this.
- Turn your oven broiler to high, and broil for 5-15 minutes until crispy. The time will vary depending on how close the wings are to the broiler (which rack).

Garlic parmesan
- Heat the olive oil and butter in a saute pan on medium, until hot and the butter is melted.

- Add garlic and saute for 3 minutes.

- Pour the garlic oil, parsley, and salt into a large bowl. Toss the wings in the bowl until coated.

- Gradually sprinkle the parmesan onto the wings, while tossing, to coat the wings and avoid clumping the cheese.

Buffalo
- Put the ingredients in a small saucepan, and heat on low.

- When the butter has melted, whisk the ingredients together until smooth.

- Pour the sauce into a large bowl. Toss the wings in the bowl until coated.
